Zuccini & Tomatoe Soup
3 Zuccini sliced in half moons
2 tomatoes diced chunky
1 Walla Walla Sweet Onion chopped
2 cloves garlic minced
1 tablespoon fresh basil chopped
1 tablespoon olive oil
1 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
3-4 cups filtered or distilled water
Saute zuccini, tomato, Walla Walla Sweet Onion, and garlic in olive oil until the onions appear translucent. Place sauteed veggies into a sauce pan. Add the herbs, spices to veggies and cover the entire mixture with water about 1/2 inch over the contents. Bring to a boil; then turn soup down and simmer for 5-10 minutes or until zuccini is soft.

Walla Walla is an agricultural region that produces a large variety of fruits, grains and vegetables that are grown locally and some of the growers participate in organic and sustainable growing standards. Always buy your produce fresh and purchase fruits and vegetables that grow in your local region. Use fresh herbs and spices whenever possible. It is a good practice to use extra virgin olive oil for all your cooking needs. Olive oil is low in saturated fat and high in Omega 3's. Sautee your vegetables in a little olive oil for your homemade soups, stews, or other gourmet fare. Sauteeing your veggies first will bring out the nautral flavors of the fresh produce. Always have good intentions when you are cooking so that the food you create has good energy.
It is a good practice to purchase organic non-GMO produce, meat, staples beer and wine locally because you will support your own community. Shopping locally is also a sustainable practice. Shopping at your local Farmers Market is a great place to purchase fresh produce and gourmet food items.
If you can't find organic speciality foods locally, you can go online and shop the numerous organic and naural food stores and have it shipped to your door! Many times, shopping online will save you time and money in the long run.
