Feature Recipe: Zuccini Tomato Soup

Zuccini Tomato Soup    

Saute zuccini, tomato, Walla Walla Sweet Onion, and garlic in olive oil until the onions appear translucent. Place sauteed veggies into a sauce pan. Add the herbs, spices to veggies and cover the entire mixture with water about 1/2 inch over the contents. Bring to a boil; then turn soup down and simmer for 5-10 minutes or until zuccini is soft.

Serves 4
